I wonder about the trees.
Why do we wish to bear
Forever the noise of these
More than another noise
So close to our dwelling place?
We suffer them by the day
Till we lose all measure of pace,
And fixity in our joys,

But never gets away;
And that talks no less for knowing,
As it grows wiser and older,
That now it means to stay.
My feet tug at the floor
And my head sways to my shoulder
Sometimes when I watch trees sway,
From the window or the door.
I shall set forth for somewhere,

The Green Tomato Jam

Ingredients

6 medium, firm, green tomatoes
Finely grated lemon zest Juice of 1 organic lemon (about 1/4 cup)
2 1/2 cups sugar
1/3 cup wild honey
2 pinches coarse sea salt
1/2 vanilla bean

Steps:

  • Wash, sterilize seven jars and their lids of 150 ml each by immersing them in boiling water for 10 minutes
  • Carve out cores from the tomatoes, and cut them into quarters
  • Cut each quarter into thin slices
  • Throw in the tomatoes, lemon zest, juice, sugar, honey, and salt in a large saucepan or heavy-bottomed pot
  • Delicately slice the vanilla bean open lengthwise
  • Gently scrape the seeds with the back your knife, and add into the pot Toss in the empty pod as well, for added flavour
  • Set the pot over medium heat, and bring to a boil
  • Continue stirring to combine the ingredients, and prevent burning
  • Cook at a fairly lively simmer for 40 to 45 minutes or until the preserve is glossy with a thick consistency
  • Reduce the heat to medium-low if necessary
  • When done, remove the vanilla bean pod, and pour the preserve into the sterilised jars using a funnel. Screw the lids tightly, and store in a cool dark place for up to 1 year.
